Pumpkin Bread

I've had a couple people ask for this recipe, so here it is. It's more like a cake than actual bread. I am going to be honest. It's great.



Chocolate Chip Pumpkin Bread

Mix together:
4 1/2 cups flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
4 1/2 tsp. cinnamon
3 cups sugar


Add to mixture:
3/4 to 1 cup oil
6 eggs
1 large can Libby's pumpkin (the yellow can)
1 12oz. bag chocolate chips


Stir until well combined. Pour into 3 greased and lightly floured loaf pans, or 8 mini loaf pans. (I use the disposable ones.)

Bake at 350 degrees for an hour adn 10 minutes. Toothpick test to make sure they are ready--you might need to add a couple of more minutes to the cooking time. The baking time for the mini loaves is a little less than an hour.


Ohh, this is making is hungry. I am going to go make some!
