Baked Ranch Quesadillas

We tried this recipe tonight for a quick dinner and really liked it...even the kids ate up! It's from here but I added pepper to my recipe. I like pepper. If you like things a little spicy, use pepper jack cheese and hot salsa...or diced jalapenos!



Baked Ranch Quesadillas

2 chicken breasts, cooked and shredded
1 1/2 cups monteray jack cheese, shredded
1/2 cup prepared Ranch dressing
1/4 cup diced green chiles (optional)
1 small can shoepeg corn
1/2 cup good salsa
1/4 tsp pepper
flour tortillas
butter

Preheat oven to 375 degrees.

Combine first seven ingredients and mix well. Butter one side of each tortilla. Place 1/2 cup chicken mixture on un-buttered side of tortilla and fold in half. Spray a cookie sheet with cooking spray and place quesadillas on sheet. Bake at 375 for 15 minutes, or until golden brown and slightly crisp.

Serve with guacamole, salsa, Ranch dressing, or sour cream.
