Baked Parmesan Potatoes

I found this recipe here...it's one of my new favorite recipe blogs. They are really delicious and quick. Just a side note, don't over-do the butter...they won't come out crispy. I also included my own recipe for chive sour cream.





Baked Parmesan Potatoes
6 small baking potatoes, halved length wise
1/4 cup butter, melted
grated Parmesan
garlic powder (or garlic bread sprinkle)
seasoned salt (or other seasonings to taste)

Preheat oven to 400 degrees. Melt butter and pour into a 9x13 pan (best if not Pyrex) and spread to evenly coat the bottom. Generously sprinkle Parmesan over the butter and lightly sprinkle the other spices. Place potato halves, cut side down, on butter. Put into preheated oven and bake for 40-45 minutes. Let cool 5 minutes before removing from pan. Serve with chive sour cream.

Chive Sour Cream
16 oz. sour cream
a handful of chopped chives
salt
pepper

Mix together and taste. Add more salt and pepper until desired taste. Chances are you'll need more!
