This recipe is embarrassingly easy. It's a great "go to" recipe when dinner time is coming quickly and you're tired. I just use pre-made ingredients, but feel free to make your own.
Creamy Pesto Penne with Chicken
jar of favorite Alfredo sauce (I like Classico)
jar of favorite pesto
penne pasta
flat leaf parsley
2-4 chicken breasts (depending on size)
Salt and pepper chicken. Place in a baking dish and bake for 35 min (depending on the thickness) at 350 degrees.
While chicken bakes, cook penne according to directions. In a small sauce pan, combine jar of Alfredo sauce and some of the pesto. Eyeball the amount of pesto...you don't want too much so it overpowers the sauce.
Remove chicken from oven and slice. Combine drained penne with pesto Alfredo sauce. Pour noodles in a serving dish and top with chicken. Sprinkle with a handful of chopped flat leaf parsley.
Serve with rolls or french bread and salad.
